PlanningThe month of April is over already and it seems like it was only yesterday that I was celebrating April Fools Day!

I had intended to blog more often this month and start a new habit but procrastination reared its ugly head and here I am writing my first and only post on the very last day of the month. :-(

I have been planning this post for some days already and to be fair I am one week into a very bad cold, my cat Cannelle, who is 7 years old had to be left overnight at the vet’s after vomiting bloody stomach contents which necessitated many trips to and from home but if I am completely honest I must admit that I am very creative when it comes to doing everything but what I have set out to do.

We all have goals we want to achieve. Some are short term, some are long term and others really don’t have a clear deadline that we can see. All of them are important to us. They give us a way to look forward and provide us with feelings of accomplishments once we achieve them. Just the lift we need from time to time :-)

Each of us has a different set of goals based on our past experience, our age, our hopes and aspirations and what we want out of life. Some dream of getting a college education, some want to get married and have children, others want to save for a home or retirement or want to travel the world.

No matter what our goals may be we need to focus on our own needs ignoring what others around us as doing. It is our life we are planning, our future, our happiness. We are the one responsible and in charge. What anyone else does is irrelevant and only acts as a distraction on our path to achievement.

Each one of us decides on what makes us “whole”. We not only  have goals that relate to our careers.  We  also have goals for our physical and mental health, personal relationships, educational achievements, recreational activities, our social network and many others. Some goals may be family oriented while others are very personal.

No matter what kind of goal we are talking about the definition of reaching the end can be different for various people. I may want to learn Spanish to get by when I travel to Mexico and South America while my neighbor wants to be able to read ‘Don Quixote’ by Cervantes in the original text.

This is the last post of the  year. I have been thinking about what to write to finish the year  and decided that the best thing to do was to share with you the insights I have gained thought the most ordinary activities of my life these last two weeks.

Christmas Eve Dinner

My family has always celebrated Christmas Eve rather than Christmas day just like they did in Belgium.

Each year since I have had children, I have therefore prepared a traditional turkey dinner. Each year, some new addition to the menu has been made or an old favorite replaced by an updated version or by something new entirely just to make things more interesting for me, the cook.

As they grew up, the children’s taste became more sophisticated and they began to make requests such as roast potatoes instead of mashed, mousse cake instead of the traditional Bûche de Nöel I prefer and finally this year my son presented me with a real challenge when he transitioned to  a vegan a few months ago.

My first course is a French Canadian meat pie known as a tourtière which I prepare a couple of weeks in advance and freeze until the day of the meal when I pop it in the oven until it’s bubbling hot.

Then comes the stuffed turkey, spicy maple glazed sweet potatoes, Brussels sprouts tossed in butter and nutmeg, leeks and carrots in white sauce, cranberry sauce and salad. The whole followed by a blackcurrant mousse cake.

Now, I was going to have to provide a second meal without any animal product at all, not even butter or eggs.

How was I going  to pull this off without going mad and ending up tired and stressed out at the Christmas Eve dinner which I really wanted to enjoy like everyone else?
